After harvest, the cherries are fully washed and fermented using fresh spring water, then slowly dried on raised beds to preserve clarity and structure. This method highlights the classic Yirgacheffe profile, known for its bright acidity, clean cup, and refined floral character. At the producer level, fermentation, washing, and drying are closely monitored to ensure consistency and specialty-grade quality. The coffee is fully traceable from farm to export and produced using sustainable farming practices.
